Before the current generation of chefs came along, the number of restaurants in Scandinavia where you could find a good meal was limited to a handful. Hans Välimäki’s restaurant is one of those places; it opened in 1998, nearly a decade before the New Nordic cuisine changed the worldwide culinary landscape.
